Spiced Metheglin Recipes

Metheglin is mead brewed with herbs and spices. The name comes from the Welsh word "meddyglyn" meaning healing liquor — historically, metheglins were medicinal tonics.

Popular Spice Combinations

Holiday Metheglin

  • 1 cinnamon stick
  • 3 whole cloves
  • 1 vanilla bean (split)
  • Pinch of nutmeg

Summer Refresher

  • 1 tablespoon fresh ginger (sliced)
  • Zest of 1 lemon
  • 2 cardamom pods

Floral Metheglin

  • 1 tablespoon dried lavender
  • 1 tablespoon chamomile flowers
  • 1 teaspoon dried rose petals

When to Add Spices

Add spices during secondary fermentation for more control over flavor intensity. Taste every 3-5 days and rack off the spices when the desired flavor is reached.

Tips for Success

  • Less is more — You can always add more spice, but you can't take it away
  • Fresh vs dried — Fresh herbs give brighter flavors; dried are more concentrated
  • Whole spices — Always use whole spices, never ground (easier to remove, cleaner flavor)
  • Pair with honey — Lavender honey + lavender spices = extraordinary. Orange blossom + cinnamon is classic.
